Makars Mash Bar is an Edinburgh restaurant built by owner John Stamp and now shaped alongside his daughter Katie. As the business grew from seven staff to more than 70, payroll became a bottleneck: paying more than 80 staff over peak summer months once took a day and a half, with each payment approved individually and a bank limit of £50,000 a day forcing wages to be staggered across multiple days.
